The coating works by reacting with the surface of the fruit slice and preventing breathing and oxidation. Tests have shown that the coating protects apple slices from browning for up to four weeks.

Agricoat Industries of the United States is addressing the issue of coating use in Europe and further confirms that it is adjusting the composition of the apple coating to apply to stone fruits and green vegetables.
